Jacobins Foeder N°17 is a pure lambic beer of spontaneous fermentation, matured for over 6 years in a single oak cask, numbered XVII. This 100% foeder beer underwent a sublime taste evolution, thanks to the maturation process that played an active role over the years. After bottling a second fermentation took place. The beer has a mildly sour taste with notes of wood and red fruit, followed by a slightly dry finish. The combination of spontaneous fermentation and refermentation in the bottle creates a beer with a unique taste complexity, while being well balanced at the same time.
